Pumpkin Roll Time!

Yes, I'm trying my baking skill...pumpkin roll. I've made this recipe several time and its delish! However, mine never turns out looking like a store bought roll. Here I'm mixing the pumpkin in with the beaten eggs.

Now I'm spreading the pumpkin "dough" into the jelly pan. I line mine with wax paper and grease it well.

Now you can see the roll out of the oven, of course I think I aver cooked it a minute. I'm mixing the filling.

Shhh...No one"s looking here!

My finished product! I'll wrap it in foil and refridgerate till tomorrow.

Heres the ingredients:

3 eggs

1 cup sugar

2/3 cup canned pumpkin

1 tsp lemon juice

3/4 cup flour

1 tsp baking power

2 tsp cinnamon

about 1 1/2 cups powered sugar

Filling:

1 pkg Cream Cheese

4 Tblsp butter (I used margarine)

1 cup power sugar

1 tsp vanilla

Beat eggs in mixing bowl, gradually beat in sugar. Fold in pumpkin and lemon juice.Fold in remainder of dry ingredients.Line a jelly roll pan with well greased wax paper and spread batter into pan. Bake at 325 for 15 min.Quickly loosen sides with knife and turn pan out into a towel sprinkled with powdered sugar. Remove wax paper and roll cake with towel first (this never works well for me!) Mix filling ingredients together with blender and spread on "roll". Roll the dough like a log. Ad-Venture

Okay, I'm all in for Black Friday, but honestly, spreadsheets and all on the ads. Even the "kids" at my work are totally hiped up over the big shopping day. The "kids" which are guys, are helping all of us with price comparisons, online sites,spreadsheets and coupons. (Would you think...I caused all of this?!)

I'm very proud of all the under 25 group out looking for the deals. Yes, I understand, for me too its the adventure of the hunt. Finding the very best deal that's out there. Its funny how willing everyone seems this year to get up early and fight the crowds.

Me? I'll be out there, look for me. A big black garbage bag, 'cause Kristie will be coming, to hide my purchases. My big bag with all the ads to price compare (yes, really I'm nit that organized), my travel coffee mug, to wake me up. Oh and yes, my planned route to all those restrooms while drinking the early morning cup-o-Joe.

The Built-In Money Pit

Mention a huge 20x40 foot old, and I mean old built-in swimming pool, and the costs can be out of site. This is our third and final time of redoing the pool. We have lived here 17 years. We were told in thebeginning with the liner was old. This is whay our pool looks like underneath and removing the old liner.                                                                                                                                                  

 

This is a picture of the new insulation that the company put down. By the way we went with Hawaiian Pools. They were a little pricier, but I've heard nothing but good reviews about them. We'll see our pool is gaurenteed 1 full year.

This is the new liner being put down. Gotta admit those pool guys are really cute. The work was supposed to be done in 3 day, ours took 2 weeks due to "problems". They have to empty the pool once because the liner was pulling away. They did pay for the extra refill of water.

The finished product! I really can't wait until summer to enjoy our redone pool. Okay now the total price, which included a new in wall skimmer...$6000! This work was done in late October.

The Hunt for Mall Freebies

Santa has to shop early! I did a quick mall run to pick up the Thursday freebies after work. The 2 perfumes are the Aeries monthly freebies, nice little stocking stuffers if I do say. Tomorrow is my birthday so I asked about the "Birthday Gift". To my disappointment, no gift, only 20% off any purchase. Of course while I was at the mall, I used my free Victoria Secret pany coupon! Really does anyone buy underwear anymore?

Free at Rite-Aid  this week if you still have your free Herbal Essances coupon from fans of facebook. We have a brand new Rite-Aid that was built over a year ago and I have never ventured in it. Really, I'm not a fan, but I saw the BOGO ad so I thought I would give it a whirl. I know people who have had problems with Rite-Aid but I sucked it up and even asked the clerk very politely if I used my free coupon can I still get the other one free? I beemed from ear to ear when she said yes!

Now a note to my darling daughters Jessie and Kara, you can never beat your momma in the deal category. However, I'm proud that you did get your facebook coupon on your own.
